I was at a wine and cheese party on the weekend hosted by a dear friend of mine. We opened a bottle of rose petal mead left over from the previous year's wine and cheese, and it was unbelievably good. So, I got the recipe.

Now I need to course rose petals, and it goes to the top of the list.

Basic info for the batch she made for this specific bottle: "6 honey pounds. 32 cups of water. 12 cloves. 2 nutmegs. With dried rose petals I used 75grams.". Champagne yeast.

I'm incredibly indebted to Kelly for sharing her recipe, and can't wait to try it out.
